Herbs de Provence & Champagne Mustard

Mustard is one of those 'must have' condiments. It is versatile and flavorful. Herbs and spices are combined with mustard seeds, distilled vinegar, and real Champagne wine to create a classic mustard that adds the flavors of Provence to your favorite vinaigrette, sandwich, grilled or roasted meats, and sauces.

French Vinaigrette is easily prepared using either a blender/food processor or a bowl and a wire whisk.

Put 2 tablespoons red wine vinegar (try our Cabernet or Merlot wine vinegars) and 1 teaspoon sea salt in a medium bowl. Stir with a wire whisk to dissolve the salt. Slowly whisk in 2 teaspoon Herbs de Provence & Champagne Mustard. Slowly pour 6 tablespoons for extra virgin olive oil into the vinegar in a thin stream while vigorously stirring with the whisk. Season with a few grinds of fresh 4 Peppercorn Mélange. You can add additional olive oil to taste, up to 2/3 cup.

For a vinaigrette that won't separate right away, pulse in the blender or the food processor while streaming in the oil.
