Another gem from Cuisine Perel is their Cranberry Orange Vinaigrette. This one reminds me of Autumn – fresh cranberries and tart apples. It is made from real fruit juices, red wine vinegar, orange mustard (made with soybean oil, garlic, ginger, and other spices) and canola oil. Imagine this one over baby spinach with gorgonzola cheese, wafer thin slices of crisp fall apples, candied walnuts, and topped with a sprinkling of dried cranberries. Thin slivers of roasted port tenderloin or grilled chicken would turn this into a fabulous meal in a bowl! I like that it is a 'thin' vinaigrette – not oily or thick. It does what a vinaigrette is supposed to do – enhances the flavors of the greens, not over power or weigh down.
