One of my mother's favorite holiday salads is a classic Waldorf Salad. She used to make the most delicious dressing. Over the years, I have added my own touches to this family favorite. I always lightly toast the walnuts and I now use Cuisine Perel's Apple Cider Vinaigrette. I thicken it slightly with a little plain yogurt or mayo. Made from real cider vinegar, canola oil, Champagne mustard, natural juices and seasonings, it is delicious in pan sauces for pork and chicken.
I like that it is a 'thin' vinaigrette – not oily or thick. It does what a vinaigrette is supposed to do – enhances the flavors of the greens, not over power or weigh them down.
