Fire roasted peppers, EVOO, fresh onions, fresh garlic, capers, and herbs and spices give this delicious spread (pesto) its zesty flavor. Use it as a spread on sandwiches, in dressings, on pizzas, or serve on crispy crostini.
Create one of my favorite quick suppers: Toss roasted pepper pesto (spread) with hot cooked penne or farfella pasta, add bite sized chunks of cooked chicken breast, and sprinkle with freshly grated parmesan cheese and minced Italian (flat leaf) parsley. Serve with mixed greens dressed with vinaigrette.
This chunky spread makes a delicious addition to tuna salad. Just add a few heaping spoonfuls (or to taste) of roasted pepper spread to a can of drained and flaked albacore tuna and then blend in just enough mayo or plain yogurt to moisten. Serve on bread, crackers or top a bed of salad greens with a scoop of Tuna with Roasted Sicilian Red Pepper Spread for a refreshing entree.
